Avocado Bean Salad

2 avocados cubed
1cup cherry tomatoes sliced in half
1/2cup white onion diced
1 can chickpeas rinsed and drained
1 can black beans rinsed and drained
1 can shoepeg corn rinsed and drained
Mix all together in large bowl set aside
1/4 cup red wine vinegar
1 tbsp rice wine vinegar
2 tsp fresh lime juice
2 tsp fresh lemon juice
1 tbs honey
2 large garlic cloves
1 tsp salt
1 tsp pepper
1 tsp cummin
1/4 cup olive oils
Put all ingredients in a bullet or small food processor until smooth and well combined.
Drizzle dressing over bean avocado mix... Eat!

Sesame Tofu Pasta:


Cook one package of Tofu pasta as directed.
Combine 1/4 c of sesame oil and 1/4 c tamari sauce
Sprinkle black sesame seeds on top
