A twist on tacos perfect for veggie lovers.

JACKSONVILLE, Fla. – I don't think there is a food that sends people running from the table faster than Tofu. You may be thinking the same thing...Tofu...eewwwwww.

Let me tell you something: this over looked bean curd can bring bold flavors to your dinner table. If you haven't had it, it will take a leap of faith, some spices and of course a little Culinary Nunnsense. So let's start with a recipe that allows for those bold - spicy flavors, crunch and toppings to maybe disguise the tofu enough for you and your family.

Tantalizing Tofu Tacos

Crunchy, flour or corn shell -- It's your call on this easy to prepare twist on an old fatty favorite.

Ingredients

1 block of extra firm Tofu (Do not be tempted to buy the cubed variety. Cube it your self for better results.)
1 tbs chili powder
1/4 tsp garlic powder or granulated
1/4 tsp onion powder
1/4 tsp cayenne powder or chipotle powder...careful, this stuff is the heat in this recipe
1/4 tsp dried oregano
1/2 tsp smoked paprika
2 tsp ground cumin
1 tsp course kosher salt

This fun favorite is often on the menu at Case De Loco, also known as the Nunn residence. The flavors stimulate the senses while the tofu and optional toppings fill the belly.

In a small bowl combine all dry ingredients. After combining, taste it. Too spicy, not enough, make adjustments now.

Remove tofu from package and drain liquid. Wrap tofu in paper towels and let stand. Unwrap tofu and let air dry for a few minutes. With a sharp knife cube tofu in to 1/2 inch pieces or planks. In a bowl add tofu and a light dusting of the taco seasoning. Toss to coat. Repeat until all seasoning is used.

Since this dish cooks fast, take this time to allow those flavors to marry with the tofu and prepare your toppings and preheat shells:

Here is a list of our favorites:

  • Shells, Crunchy: whole grain or the Garden of Eatin Blue Corn Chips
  • Shells, Soft: Small Corn tortillas or the whole grain, whole wheat fat free or low fat variety.
  • Lettuce, finely shredded
  • Tomatoes, seeds removed, diced
  • Avocado, thinly sliced
  • Cilantro, rough chopped
  • Jicima, thin match sticks
  • Green Apple, very thin match sticks
  • Salsa, homemade or packaged, red and green varieties
  • Sour Cream, LOW FAT or FAT FREE
  • Shredded Cheese, LOW FAT or FAT FREE
  • Tabasco or your favorite hot sauce

In a lightly oiled skillet over medium-high heat add tofu. Give a quick toss to coat and then let rest. After a couple minutes toss again and repeat until lightly toasted on all sides. Place the toasted tofu on a serving plate or bowl and prepare for spicy south of the boarder goodness. Combine tofu and toppings as desired and enjoy this meal knowing you are doing something good for you and your family.

Like I said, if you haven't tried tofu it will take a leap of faith, but I think if you combine these fragrant flavors and top your taco to your liking I think even the true carnivores will say, when it comes to tofu, there is Nunn better.
