Delicious cupcake recipe from two "Cupcake Wars" winners

They won the Food Network's "Cupcake Wars." and then the two moms took their $10,000 prize and started their own bakery called Bake You Happy.  Now Kim Thurmn and Kim Aeck are sharing one of their favorite cupcake recipes.

  • 2 cups granulated sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup half and half
  • 1/2 cup canola oil
  • 1 tablespoon pure vanilla extract
  • 1 cup boiling water
  • 1 cup crushed graham crackers
  • ¼ cup melted butter
  • 2 tablespoons sugar
  • Marshmallow frosting to follow

  • Preheat the oven to 350 degrees F.
  • Line 2 regular size cupcake pans with cupcake liners.
  • Mix together crushed graham crackers, melted butter and 2 tablespoons butter.
  • Take 1 tablespoon of crumbs and push in the bottom of liner.
  • In a large bowl using an electric mixer on low speed, stir together sugar, flour, cocoa, baking powder, baking soda, and salt.
  • Add the eggs, half and half, oil, and vanilla to the bowl and beat on medium speed for 2 minutes.
  • Fill cupcake liners 3/4-full with batter and bake for 15-20 minutes or until they spring back when touched with your finger.
  • Let the cupcakes cool in pans for a few minutes then remove cupcakes to a wire rack to cool completely.
  • Marshmallow Frosting:

    • 8 egg whites
    • 2 cups granulated sugar
    • 3/4 teaspoon cream of tartar
    • 1 teaspoon pure vanilla extract

  • Place egg whites, sugar and cream of tartar in a heat safe bowl over a saucepan with boiling water. 
  • Whisk constantly over heat for 1-3 minutes.
  • Once the sugar has dissolved remove from heat and beat with electric mixer on high for 5-7 minutes until stiff peaks have formed. 
  • Stir in vanilla extract.
  • Pipe frosting on top of the cupcakes. 
  • Toast frosting using a professional cooking torch.
