The pastry chefs at the Ritz Carlton, Amelia Island say its easy to create your own Gingerbread House masterpiece at home. Here is their secret for their royal icing.
3 ounces egg whites
1 teaspoon vanilla extract
4 cups powdered sugar
Whip the eggs and vanilla until frothy.
Add the powdered sugar slowly until incorporated and smooth.
Mix on high speed until stiff glossy peaks form.
Spread or pipe icing to decorate gingerbread houses or people.
Store in an airtight container in the refrigerator.
