Recipe #1: An easy south of the border inspired chicken dish

Ingredients:
Chicken breast, one 4-6 ounce portion per person
Vegetable oil or grape seed oil to coat pan... you can use olive oil too

Rub:
Salt and pepper to taste
1 Tbsp Chili Powder
2 1/2 tsp granulated garlic
1 tsp Oregano
1 tsp Cumin
1 1/2 dried Cilantro

Mix rub in a small bowl to combine.
In a hot skillet add enough oil to lightly coat the bottom.
Season Chicken
Add seasoned hot chicken to the hot pan, over medium high heat, making sure you allow the chicken to fall away from you while placing the breast in the pan.
Pan sear chicken on each side for 4 to 7 minutes.
Remove chicken from heat and let rest for a couple of minutes.
Serve with a healthy side and enjoy

Recipe #2: Simple, yet flavorful chicken dish is a regular in my kitchen

Ingredients:
Chicken breast, one 4-6 ounce portion per person
Salt and pepper to taste
Mushrooms, rough chop, 10 to 12 should do
Garlic, one clove finely chopped
1 oz fat free, low salt chicken broth. No broth? Just use water or white wine

Season chicken with salt and pepper
In a hot skillet add enough oil to lightly coat the bottom.
Add seasoned hot chicken to the hot pan, over medium high heat, making sure you allow the chicken to fall away from you while placing the breast in the pan.
Pan sear chicken on each side for 4 to 7 minutes.
Remove chicken and deglaze the pan with the chicken broth. There is FLAVOR in those brown bits!
Add chopped mushrooms to pan. These will soak up any remaining liquid.
Add garlic and sauté until the garlic is fragrant.
Combine chicken and mushrooms as well as any liquid from the pan and serve.
I hope you try these simple money saving dishes. I think once you start dividing your chicken and other proteins to proper portion sizes you will start to see your food dollars grow. I also think that if you give these dishes a try you too will agree, there ain't Nunn better.
