RECIPE: Miss Holly's Chocolate Cake

Hollis Wilder, owner of Sweet by Holly, is sharing her secret recipe for chocolate cake. This recipe yields about 30 cupcakes.

 

Ingredients:


2 cups                     Granulated Sugar

1 3/4 cups            All Purpose Flour

3/4 cup                   Extra Brute Cocoa Powder

1 1/2 tsp                Baking Powder

1 1/2 tsp                Baking Soda

1 tsp                         Salt

2 each                     Whole Eggs

1 cup                        Buttermilk

1/2 cup                    Canola Oil

2 tsp                         Madagascar Bourbon Vanilla Extract

1 cup                        Hot, Freshly Brewed Coffee

Directions:

1.     Preheat oven to 350F

2.     Into a mixing bowl, measure your dry ingredients (Sugar, Flour, Cocoa Powder, Baking Powder, Baking Soda, Salt) and whisk together until combined

3.     Into another mixing bowl, measure out your wet ingredients (Whole Eggs, Buttermilk, Canola Oil, Vanilla Extract, Coffee) and whisk together.

4.     While whisking the wet ingredients, start to gradually add in your dry ingredients, one measuring cup at a time until completely combined.

5.     Line cupcake papers into pans and using a standard ice cream scoop, scoop batter into papers.

6.     Bake for 15 to 20 minutes, or until set.
