Taking mystery out of classic key lime pie
Key lime pie recipe from Ritz-Carlton Pastry Chef Sherrin Gotschall
The perfect summer time treat -- cool, sweet and tart key lime pie!
Graham Cracker Crust Recipe
1 cup graham cracker crumbs
1½ Tbsp - All-purpose flour
1 Tbsp - sugar
½ stick or 4 oz. - butter, melted
Procedure: Combine first three ingredients in mixer using a paddle on low speed. Add melted butter until evenly mixed. Press graham cracker crumbs in sides of 9-inch pie mold.
Key Lime Custard Recipe
3 - 14oz. cans sweetened condensed milk
13 egg yolks
8 oz. key lime juice
Procedure: Mix all three ingredients in mixer with paddle. Pour key lime custard mix in shell until it reaches the top of the sides. Bake at 300F until custard is set, about 30 minutes.
Honey Meringue Recipe
4 egg whites
12 oz. honey
Procedure: In small pot, boil honey and then turn off the heat. In a kitchen aide bowl, whip up egg whites to a soft peak and slowly add the boiling honey. Continue whipping to a stiff peak. Spread over the key lime pie and lightly torch.
