Shrimp 5 oz.
Smoked bacon 2 oz.
Minced Scallions 1 Tbsp.
Bacon Fat 1 oz.
Minced Garlic 1/2 tsp
Minced Shallots 1/2 tsp
White Cheddar Grits 10 oz
Toast points 3 each

1. Toss shrimp in flour
2. Saute in bacon fat until golden brown on both sides
3. Place grits in bowl
4. Add shallots, garlic and cooked bacon to shrimp and lighly saute.
5. Pour mixture over center of grits and top with scallions
6. Place toast on bowl at 10 o'clock.
