Making sure the food you eat at the Jacksonville Greater Fair is safe

JACKSONVILLE, Fla – Some people go for the animals, rides, entertainment but probably all of us grab something to eat while we're at the fair.  It's a utopia of delicious, sweet, or savory treats.  State inspectors make sure the food you eat is safe and not going to get you sick.

"We be on point all the time not some of the time but all the time," says Bulluck.

Andre Bulluck runs Dre's Place.  He's serving up a lot of favorites.

We cook fresh foods like collard greens, macaroni and cheese, baked beans, coleslaw, sweet potato fries, fried okra, Brunswick stew, beef brisket, chopped pork, Filet Mignon on a stick and all those good things," says Bulluck.

Just like the food Bulluck doesn't skimp on following the rules.

"We try to keep a clean operation so we can be very conscious and healthy to the public," says Bulluck.

Each one of these vendors has a health inspection before they're able to serve you and they have to be prepared to open the doors to an inspector at any point during the fair.  Chris Fry serves one of the most popular pieces of meat at the fair, turkey legs.  He says he's not afraid of an inspection.

"Keep doing what we're doing we're clean operation and we operate the same way every year and we have a good return," says Fry.

Many of the vendors are seasoned and have done this many before. They have to have running water, food at the proper temperatures, sanitizing solution to clean with just name to a few of the regulations.  Passing inspections isn't something these folks worry about much, it's all about the food.

"It's real food at a fair it's kind of not fair no pun unintended,"  says worker at the Pickle Barrel.

The pickle barrel is taking fair food to another level.  They serve sirloin steak, fresh mashed potatoes, grilled mushrooms and onions.   Some vendors have been in the national spotlight.


"Piece of cheesecake wrapped in a tortilla that it's deep-fried then rolled and cinnamon sugar it's got Caramel sauce raspberry sauce whipped topping and sprinkles," says Barbara Adams.

She  runs the Red Chili Pepper that cheesecake has been featured on Carnival cravings the belly buster burrito will also be featured on Food Network next year.

So do your research for what tingles your taste buds and trust state inspectors have done there research to  make sure you don't get sick.
