On this episode of Culinary Nunnsense we are making mayo!

I know what you are thinking. Why? They sell it by the jar and by the bucket!
Yes they do, but have you ever read the ingredients on that jar or bucket?

It's not just the unwanted added ingredients, but for me it's a consistency issue. Store bought mayo leaves a oily film that I do not find appetizing. So, at Casa de Loco (my house) we use fresh homemade mayo and we get a 10-15 minute arm work out.

Aide from the whisking (you can use a mixer set to a slower setting), home made mayo is quick, easy and cost effective.

Here is what you'll need:

1 egg yolk
1/2 teaspoon fine salt
1/2 teaspoon dry mustard
2 teaspoons fresh squeezed lemon juice
1 tablespoon white wine vinegar
1 cup light olive oil or light veggie oil

OK, here is where the work out starts. If there are two of you in the kitchen, take turns whisking. Maybe you son or daughter drizzles in the oil and you whisk. When your arm gets tired - and it will - you can switch sides.

In a glass bowl, whisk together egg yolk and dry ingredients. Combine lemon juice and vinegar in a separate bowl then thoroughly whisk half into the yolk mixture. Start whisking briskly, then start adding the oil a few drops at a time until the liquid seems to thicken and lighten a bit. Once you reach that point you can relax your arm a little and increase the oil flow to a constant thin stream. Once half of the oil is in add the rest of the lemon juice mixture.

Continue whisking until all of the oil is incorporated. Then take a much needed arm break. Leave at room temperature for 1 to 2 hours then refrigerate for up to 1 week.

Easy Remoulade:

2 parts mayo
1 T brown or ground mustard
3 chopped Cornichons or small dill or sweet pickles
A pinch or two of Parsley
A pinch or two of Tarragon
1 T drained capers

Mix well and serve

Pecan Mayo

2 Parts mayo
1 T ground or brown mustard
1 part toasted chopped pecans
1 t lemon juice

Mix well and serve.

Yes, your arm will get tired, and you may even break a sweat, but look you're burning calories even before you slather on the spread!  If you give this arm work out a try - I mean mayo a try - you to will see and more importantly taste the difference.

So when you friends come by for a snack and they taste your homemade mayo and they say it's the best sandwich ever you can say, there is NUNN better.
