Chef Jessica Bright's Big Game Snacks

Chef Jessica Bright and her son visit the morning show on Friday with her son, Max, to show how preparing snacks for a Super Bowl party can be a family affair.

"Go Bears" Chocolate Party Mix

Bright's husband is from the Chicago area, but the recipe works just as well for any fans.
    2 cups chocolate graham teddy bear cookies
    2 cups peanuts
    2 cups oat ring shaped cereal
    7 cups woven corn or rice cereal
    1 cup semi sweet chocolate chips
    ½ cup creamy peanut butter
    ¼ cup butter
    ½ tsp vanilla extract
    1½ cups powdered sugar
    2 cups graham teddy bear cookies

In a large bowl combine the chocolate cookies, peanuts, oat rings, and woven cereal.

In a microwave safe container combine the chocolate chips, peanut butter, and butter. Microwave for 30 seconds, stir, microwave and additional 30 seconds, stir. Microwave a little longer if necessary to melt chocolate. Stir in vanilla extract.

Pour chocolate mixture over cereal and stir gently but thoroughly; evenly coat all cereal. Add the confectioner’s sugar and stir again to evenly coat. Stir in the remaining 2 cups of teddy bear cookies.

Salsa Queso Dip

    8 oz cream cheese
    1 cup pineapple salsa

Soften cream cheese in microwave for 20 seconds. Whisk in the salsa. Enjoy on chips, vegetables, or quesadillas.

Party Quesadillas

    10 whole wheat flour tortillas
    5 cups shredded cheese (cheddar, Monterey jack, or a blend)
    ½ cup chopped green onion
    ½ cup diced tomato
    3 TBSP minced fresh cilantro
    2 cups chopped cooked chicken, turkey, steak, or shrimp
    2 cups finely shredded lettuce

Heat a non-stick skillet on medium high heat. Place a tortilla on the skillet and allow it to cook for about 30 seconds until it starts to brown on the underside.

Use a spatula to turn the tortilla over. Add about a half a cup of the grated cheese to half of the tortilla, leaving space around the edges to allow for melting. Add some of the meat, tomatoes, onion and cilantro as desired.

When cheese starts to melt a use the spatula to fold the tortilla in half over the fillings; continue to cook quesadilla in the skillet- turning over once until cheese is melted through or place on baking sheet, complete all quesadillas to this point, then place in the oven and bake at 300 until cheese is melted -- about 10 minutes.

Serve with Salsa Queso dip and shredded lettuce if desired.
