Refreshing Chickpea Salad



1 cup Quinoa

1-3/4 cup water

1 Red Bell Pepper chopped

1 Yellow Bell Pepper chopped

3 Green Onions

1 can Chickpeas (rinsed)

1/2 cup Parsley chopped

1/4 cup Mint Leaves chopped

1/2 cup Lemon Juice

1 Tablespoon Soy Sauce

1 Tablespoon FreshJax Grill Master Seasoning


Top With:

FreshJax Everything Sauce

FreshJax Coconut Bacon


1.  Combine water and quinoa in a large sauce pan and bring to a boil over high heat.  Reduce heat to low and cover, simmering for 1 minute.

2.  Combine bell peppers, green onions, chickpeas, parsley, and mint in a large bowl.

3.  When quinoa is finished, fluff with a fork and add to mixing bowl.

4.  Stir in lemon juice, soy sauce, and Grill Master Seasoning.  Cover and let chill for 2+ hours to allow flavors to blend.

5.  Top with FreshJax Everything Sauce and FreshJax Coconut Bacon and enjoy!
