In order to cook the perfect steak you need the right cut of meat. If you are in a hurry you can skip the hunt and ask your butcher for some help or with these tips you too can select the best cut for your grill.
Tips for selecting beef cuts:
* Select cuts that are bright red in color
* Don't cut the fat before cooking. Some silver skin may need to be removed from certain cuts.
* Do not pierce your steaks before marinating

What about those grades?
USDA Prime: Prime is the best. Has the most marbling.
USDA Choice: A little less marbling. Widely available and easy to shop for.
USDA Select: Little marbling. Usually leaner (less flavor) and les juicy.

Let's Review:
1. Select the cut
2. Prepare your beef. Moore's makes this easy. Marinate tender cuts 15 minutes to two hours. Tougher cuts like flank steak should marinate 2 to 6 hours, in some cases overnight.
3. Cook your beef.

1. Allow your steak to reach room temperature before grilling. This doesn't mean let your meat sit hour after hour on the counter. 10 - 20 minutes is fine.
2. Preheat the grill as hot as it will go for a gas grill or a single layer of ashy white coals for a charcoal grill.
3. Oil the grate.
4. Grill. Place each steak on the grill for a minute or two. Turn and rotate 45 degrees and grill for another minute or two. If you do this right you will get a nice diamond pattern of grill marks. Turn the meat over and grill until done.
5. Remove. Let the steaks rest for 5 minutes before serving. This will let the juices flow out from the center, redistributing moisture, so the whole steak is nice and juicy.
