Thanksgiving with a touch of the Irish

Fresh Roasted Turkey Dinner
Slow roasted white turkey breast marinated in Guinness and secret house seasoning served with mashed potatoes, gravy, peas and onions.

Turkey Recipe - Serves 8 people or more:
1 turkey breast or whole
2 quarts guinness
1 cup fresh chopped garlic
1/2 cup sage
1 cup cider vinegar
1/4 cup Culhane's spice blend (see recipe below - featured on our Food Network's Triple D show)

Combine all ingredients in pan. Add liquid to turkey, and marinate overnight. Cover and bake at 300 until cooked at 165 degrees.

Mashed Potatoes:
10 peeled and diced idaho potatoes
1 cup heavy cream
1 cup butter
Salt, Pepper, Garlic Powder to taste

Boil potatoes until tender in salted water. Mash together with rest of ingredients until fluffy.

Gravy:
1 cup cooking liquid(left over in pan from roasting turkey)
1 cup heavy cream
1/4 cup roux

Bring cream and cooking liquid to boil. Stir in roux until smooth. Taste.

Slice Turkey. Serve with mashed potatoes and gravy. Add vegetable of choice, at Culhane's, they serve it with green peas and onions.

· Garlic Powder
· Roasted Granulated Garlic - Most important flavor in mixture.
· Black Pepper
· White Pepper
· Salt - kosher
· Nutmeg, Could use all spice for these two instead.
· Ground Clove
· Dry Colemans Mustard
· Dry Basil
· Dried red pepper flakes ( not hot - Dehydrated possibly)
· Marjoram
