RECIPE: Stir-Fried Beef Lettuce Cups


Stir-Fried Beef Lettuce Cups

Serves: 4
Prep Time: 5 minutes
Cook Time: 10 minutes
Make-Ahead: Vegetables can be cut up to 8 hours ahead, covered separately and refrigerated.

1 lb. ground beef (80% lean)
1/2 yellow onion, finely chopped (about 1 cup)
2 garlic cloves, finely chopped
1 celery stalk, finely chopped
1/4 head green cabbage, thinly sliced (about 2 cups)
1/3 cup hoisin sauce
1 large carrot, coarsely shredded
3 green onions (white and green parts), thinly sliced on diagonal
1 head iceberg lettuce, leaves separated
2 tbs. coarsely chopped fresh cilantro

1. Heat a large heavy skillet over medium-high heat. Add beef and cook, stirring occasionally and breaking up meat with a wooden spoon, for about 4 minutes, or until just cooked through. Using a slotted spoon, transfer beef to a bowl.
2. Return skillet to medium-high heat, add yellow onions and garlic and cook, stirring occasionally, for about 1 minute, or until onions begin to soften. Stir in celery and cabbage, and cook, stirring often, for about 3 minutes, or until vegetables are slightly tender.
3. Stir in hoisin sauce. Return beef to skillet and cook for about 30 seconds to blend flavors. Stir in carrots and one-third of green onions. Season with salt and pepper.
4. Arrange lettuce leaves on four plates. Spoon some beef mixture into each leaf and garnish with cilantro and remaining green onions.
