Oatmeal Cookies with a St. Patrick's Day twist

Cookies fit for St. Patrick himself from Linda Weeks of Weeks Works Cakes.

Linda Weeks of Weekend Works shared this delicious and healthy oatmeal cookie recipe sprinkling in some green sugar for a St. Patrick's Day twist.

1/2 cup dried fruit (Raisins, Craisins, or Prunes)
1/2 cup sifted all-purpose flour
1/2 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg
1 teaspoon vanilla
1/4 cup melted butter
3 cups Irish oats

Instructions:

Preheat oven to 350 degrees
Mix dry ingredients in a bowl - except oats and fruit
Mix together wet ingredients
Add wet ingredients to dry ingredients in bowl
Stir in oats and fruit
Dough will be thick and lumpy
Scoop dough (about 1 teaspoon teach) and place on parchment-lined baking sheet
Bake for 15-16 minutes. Let cool on cookie sheet

* To add a touch of green for St. Patrick's Day - roll each ball of cookie dough in green sugar.
The cookies will have a festive green color when they come out of the oven!
