The 1st annual USO Chili Cook-Off is being held March 10 from noon until 5 p.m. and the money supports our local troops. It's at the Fleet Reserve Association, 5391 Collins Road in Jacksonville. The event is open to the public for chili tasting and is still looking for competitors. Step I Bring to a simmer I cup chicken broth. Add I tablespoon Chili Powder. Add 2# 93% meat, cover and cook for 20 minutes. Stir and break up meat slightly as it cooks.
Note: If using 80/20 meat, brown and drain before proceeding with step 1.
Step 2 Add 8 oz can tomato sauce, one 14 1/2 oz can beef broth and bring to low boil.
Add:
3 tablespoons Chili Powder
I teaspoon Garlic Powder
I teaspoons Onion Powder
I teaspoons Beef granules
I teaspoons Chicken granules
Cook 40 Minutes.
Break up meat slightly as it cooks.
Tum off heat, rest until 45 minutes before turn in.
Step 3. Bring pot to a slow boil
Add:
1 tablespoon Chili Powder
I teaspoon Paprika
I teaspoon Cumin
% teaspoon Garlic Powder
I packet Sazon Goya (ethnic section of most supermarkets)
Cook 15 Minutes
Break up meat to desired consistency being careful ta not make mush.
Step 4. Add 3/4 teaspoon salt,1/2 teaspoon brown sugar. Adjust heat (be careful) with Cayenne Chili Powder or Franks Hot Sauce.
Cook 10 min. Tum off heat.
Fill Cup for Turn In
Note - Chili Powders:
Use a good grade of chili powders. Some suggestions would be Tones from Sam's, Publix store brand, Mexene - purchased from Mild Bills Spices (mildbills.com), Fort Worth Light - purchased from Pendery's spices (penderys.com). These are blends to use as a base for your chili. Browse thru these spice companies and select other powders to make your bowl of red unique. Try Pecos Red for flavor, Dixon for some heat, Texas Red Dog for a finishing powder. There are also some great chili powders in local Hispanic markets. Put 1/2 teaspoon in a small bowl with some boiling water and see how you like it. Be sure to taste it both hot and cold as your cup may set a while before it gets to the judges.
