BRIO TUSCAN GRILLE: Grilled Beef Medallions with Black Pepper Shrimp

INGREDIENTS:
12 ea Beef Filets, 2 oz
Canadian Steak Seasoning or your favorite brand
2 oz. Olive Oil
20 ea Shrimp, 31/40
3 oz ladles Black Pepper Shrimp Sauce w/ Cream
1/4 tsp Salt and Pepper Mix
METHOD:
Dredge top and bottom of filets in steak seasoning and dip in olive oil.
Grill and cook to guests' request.
Season shrimp with salt, pepper, cayenne.
Heat olive oil in a sauté pan.
Add shrimp and sear, cook halfway and flip.
Add black pepper shrimp sauce.
Season with salt and pepper, heat through.
Top steaks with shrimp and drizzle with sauce.
ROASTED VEGETABLES
as needed Olive Oil Spray
8 oz cup Zucchini, sliced
8 oz cup Carrots, roasted
12 oz cup Broccoli, blanched
8 pieces Red Peppers, Roasted
1/4 tsp Canadian Steak Seasoning
METHOD:
Heat a sauté pan, spray with olive oil mist.
Add zucchini and carrots, sear and heat through.
Add broccoli, heat.
Add pepper pieces, saute.
Add water and Canadian steak seasoning, toss to combine.
