Fluffy Cheesy Egg Muffins
Ingredients
10 Eggs
¼ C Heavy Cream
Salt & Pepper to taste
½ C Cheddar Cheese - Shredded
½ pound Ham – small dice
½ C Mushrooms
½ C Red pepper - diced
1 T olive oil
Butter – softened for muffin pan
½ C Cheddar Cheese – Shredded
4 Scallions, diced
Instructions
1. Preheat oven to 350 degrees. Lightly butter muffin tin and set aside. Place saute pan on medium high heat, add olive oil, ham, mushrooms and red pepper. Saute until mushrooms are starting to wilt. Set aside and let cool.
2. In a large mixing bowl, beat eggs, heavy cream, salt & pepper for 5 minutes. Fold in shredded cheese and ham mixture.
3. Fill muffin tins ¾ full with egg mixture, top with sprinkle of cheddar cheese and scallions.
4. Bake for 20 – 25 minutes until inserted knife comes out clean.
