Fresh Citrus Salmon
Makes two portions
Ingredients
2 – 6 oz. portions of salmon
Zest of 2 oranges
Juice of one orange
3 tablespoons virgin olive oil
1/4 cup orange marmalade
1/4 cup vegetable stock
Salt and pepper to taste
Instructions
Marinade salmon for a minimum of 4 hours overnight.
In a sauté pan on medium high heat, sear salmon face down for 2-3 minutes.
Turn salmon over, and place salmon in a 375 degree oven for 7 minutes or until 150 degrees.
Place pan back on medium high heat, remove salmon and add the following to the hot pan:
-Juice of 3 blood oranges
-1/4 cup orange marmalade
-1/4 cup vegetable stock
-Salt and pepper to taste
Bring to a boil a slightly reduce.
Pour sauce over salmon and serve.
